fall(ish) recipe: breakfast quinoa parfait

i saw this recipe the other day. and knew i had to try some version of it. here's what i came up with.
qunioa-parfait
quinoa-parfait
i cooked red quinoa with apple juice instead of water.
cooked down one chopped nectarine, 1 tablespoon agave, cinnamon and nutmeg.
and layered them in a small glass with greek yogurt.

it. was. amazing.

i want to add pumpkin puree next time.. make it even more fall.

  1. mmm! looks so good. only thing is I dont care for greek yogurt too much. my mom read that you have to try something around 7 times to accumulate a taste for it, but the texture just freaks me outt.

  11. Thanks for the idea. I have a package of quinoa in my pantry and I've been meaning to find a new way to prepare it. My husband didn't like it the first time I made it, but he loves parfaits, so I'll try it out on him again.
