I made these last weekend and my husband ate seven in one day. Yes, seven. They are crazy good. The cinnamon-sugar streusal topping sets them over the edge.
Blueberry muffins
MAKES 12
1 1/2 cups unbleached all-purpose flour
3/4 cup sugar (i used evaporated cane juice)
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg (i used one egg replacer)
1/3 cup milk
1 cup fresh blueberries
For the streusal topping:
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup earth balance (or butter), cubed
1 1/2 teaspoons ground cinnamon

1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg (or replacer mixture) and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups 2/3 full, and sprinkle with crumb topping mixture.
3. To Make Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup earth balance, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking. (You may not use all the topping)
4. Bake for 20 to 25 minutes in the preheated oven, or until done.

I've been craving blueberry muffins but i've hesitated to make them for a while now because the recipe I had isn't the best. I'll have to try these!!

ReplyDeleteI have to tell you that I was skeptical as the recipe was coming together. The batter seemed thicker than I was expecting. After I folded in the b'berries it looked unlike any other b'berry muffin mix I had tried. At that moment I told my husband to recycle the piece of paper I used to print out the recipe on because I was NOT going to make these again....I WAS WRONG! As it turns out, they ARE the BEST B'BERRY MUFFINS I've ever had. My husband must agree because this morning I saw the recipe back on the counter - he dug it out of the recycle bin while taking the trash out this morning. One fun suggestion would be to use your hands when making the streusel topping rather than a fork. Much easier and waaaaaaay more fun. GREAT RECIPE!

ReplyDeleteOMG!!! i made these muffins for some weekend guests we were having and one of them was vegan. i have never baked vegan before so this was a new venture for me. to my surprise these were amazing!!!! even those that weren't vegan enjoyed them. since i doubled the batter, i had quite a few leftover, so i took them to work/school the next day and all the teachers loved them and couldn't believe they were vegan. thank you so much for this new addition to my recipe folder. this is definitely worth repeating over and over.
