We spent most of this weekend relaxing but managed to squeeze in some fun outings too. It was the last weekend of city fair downtown, so we headed there for an evening. We watched people go on all the crazy rides, ate an elephant ear and spent a great deal of time looking at the tigers and lions and other cats. There was a baby tiger playing with people (!!!) and I have about ten thousand videos to prove it.

Saturday we ate lunch at the park, where we saw a naked cyclist twice (eww) and I tried to get my legs at least a darker shade of translucent. And later in the evening I made one of our favorite dinners and we ate it outside. Felt like summer.

Nothing like a good weekend to recharge you for a busy week ahead right?

We had a really good weekend, so good I thought it was necessary to blog about it with only iphone photos (which i rarely do). We didn't do anything extravagant, in fact we didn't do much of anything but it was exactly what we both needed.

On friday we were both craving chinese food so we drove to our favorite place 20 minutes north and chowed down. Their portions are ginormous and its always fresh and not greasy tasting (chinese food can be so scary). I could probably eat their fried rice everyday.weekending

Later friday I remembered one of the frozen yogurt places nearby starting serving pineapple dole whip (the kind you can usually only find at disney parks or hawaii). Just one little google search will show you that people go CRAZY for this stuff! Me and josh were so fascinated by the cult following it has plus it sounded really good so we got some! It was my first time trying it and i have to say: It definitely lives up to the hype. It's SO refreshing (and dairy free!). We even got some to-go to keep in our freezer. When we got home I was already looking up where I could buy the concentrate so I could make it all the time. Have you ever had it?? If not and there's a Menchies frozen yogurt chain in your area, chances are they have it. You HAVE to try it!

Saturday I somehow convinced Josh to go grocery shopping with  me (love when that happens), we walked to get some coffee and then took a long nap. We also made these buffalo baked pickle chips and they were really good!

And today (which is technically the start of our work week) we picked up a donut from the cutest little shop, Coco donuts. It's a coffee shop also and I have a feeling we'll be frequenting this place quite a bit. Lavender latte anyone?? And also rose water latte?? Excited to have found you Coco donuts!

And that was our weekend! I guess it all revolved around food but most good weekends do right?? ;)

yesterday we spent all day at home doing a whole lot of nothing.. which was MUCH needed after a super busy week. The sun decided to come out so I played with my camera a bit... which leads me to the point of this post, which is to tell you about my dear friend Lindsi and the amazing things she makes. Two of which i'm wearing above.. the detachable peter pan collar and scalloped mary jane slippers. Aren't they amazing? I seriously adore every single thing she makes. It looks like both of these are out of stock currently, but this chunky circle scarf is to die for, as is the crown. I'll take one of everything! Be sure to check out her shop and show her some love on her blog too! She's the sweetest!

over the weekend:
i put finishing touches on some handmade gifts that i sent off today.
made caramels and reindeer cake pops
drank some coffee that didn't hurt my stomach
went shopping at the mall to get one present i couldn't online (it was crazy, and i won't ever do that again)
read a whole lot. (the glass castle and josh's upcoming memoir)
wore a cute dress i got for my birthday.
but other than that was in pajamas most of the weekend.


tomorrow we're going ice skating with friends, which i'm super excited about. i love ice skating, even though i tend to fall a whole lot.

weekend things and today


got 30 yards of twine(for $2!) in the mail

Miss Sara Renee sent us her new wedding brochure featuring us on the front AND back. It made me feel pretty special! She is the best photographer around, and if you need photos for anything I highly recommend her. (She's based out of Tennessee)

I cut a whole lot of hair off my husbands head. He hasn't had short hair since 2002, and he wanted some change and also wanted to keep cooler this summer so we googled Ewan Mcgregor and I started a haircut at midnight. (I am a licensed cosmetologist, so it isn't as scary as it sounds) It/he looks amazing, by the way.

I got an amazing arm workout while making salt water taffy. (Look at those veins!) More pictures and recipe coming later this week.
I had to get Josh to help. Stretching two batches of taffy for 20 minutes each equals 40 minutes! And I was tired after five..


And this was today's (very brown) green smoothie. Strawberries, bananas, orange juice, spinach and the goji & acai green superfood powder by amazing grass. It was delicious and I felt super energized. (I got quite the selection of products in the mail from them to try out.) Yum!

best blueberry muffins EVER




I made these last weekend and my husband ate seven in one day. Yes, seven. They are crazy good. The cinnamon-sugar streusal topping sets them over the edge.

Blueberry muffins
MAKES 12
1 1/2 cups unbleached all-purpose flour
3/4 cup sugar (i used evaporated cane juice)
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg (i used one egg replacer)
1/3 cup milk
1 cup fresh blueberries

For the streusal topping:
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup earth balance (or butter), cubed
1 1/2 teaspoons ground cinnamon


1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg (or replacer mixture) and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups 2/3 full, and sprinkle with crumb topping mixture.
3. To Make Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup earth balance, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking. (You may not use all the topping)
4. Bake for 20 to 25 minutes in the preheated oven, or until done.
